Our current processor is Chenoa Locker in Chenoa, Illinois. (815)945-7323. We began using them at the request of our customers who have previously had good experiences there. They will hang the beef for 3 weeks upon request, which is the appropriate amount of time for tenderizing pastured beef without excessive meat loss. Their staff is very knowledgeable about the cut choices and always willing to lend a hand. Your meat will be neatly processed to your specifications.
